Directions
-
1
Preheat the oven
Preheat the oven to 350°F (175°C).
-
2
Make the crust
Mix the graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture into a 9-inch pie plate and bake for 10 minutes.
-
3
Prepare the filling
Wash and dry the strawberries, then cut off the tops. If they are large, cut them in half. In a small saucepan, whisk together the sugar, cornstarch, and cold water. Cook over medium-low heat, stirring continuously, until the mixture thickens.
-
4
Assemble the pie
Arrange half of the strawberries in the prepared pie crust. Pour some of the cornstarch mixture over the berries and jiggle it around to make sure the mixture goes in and around all the berries. Repeat with the remaining berries on top, and cover with just enough of the cornstarch mixture to coat the berries and hold them in.
-
5
Chill the pie
Refrigerate the pie for at least 4 hours, or until it's mostly set. Cover with plastic wrap and refrigerate for another 30 minutes.
-
6
Make the whipped cream
Using a hand mixer, beat the heavy cream until soft peaks form. In a separate bowl, beat the cream cheese until smooth. Slowly beat in the maple syrup until it's loose and creamy. Fold the cream cheese mixture into the whipped cream.
-
7
Serve
Serve the pie slices cold, with a dollop of the whipped cream cheese on top.
Nutritions
This strawberry pie is a classic summer dessert that's easy to make and always a crowd-pleaser. The combination of fresh strawberries, a salty-sweet graham cracker crust, and a dollop of cream cheese whipped cream is absolute perfection. One of the best things about this recipe is that it's great for kids to help with - they can assist with washing and cutting the strawberries, and even help with the whipped cream.
The graham cracker crust is a game-changer in this recipe, providing a crunchy and flavorful base for the pie. To make it, you'll need to crush the graham crackers and mix them with sugar and melted butter. Then, simply press the mixture into a pie plate and bake until it's lightly browned.
The filling is made with fresh strawberries, sugar, cornstarch, and strawberry Jell-O powder. The cornstarch helps to thicken the filling, while the Jell-O powder gives it a beautiful pink color and a boost of flavor.
